Scottish Caramel Shortbread- Trust me, you'll want more in your mouth!
My sister studied abroad in Scotland two years ago and I was lucky enough to visit her. It was such a fun trip and once I got over my initial jet lag I had a blast. I have a lot of great memories from that trip that I will keep with me forever, but one of the most influential parts of that trip was my first caramel shortbreads. My first one was one of the most delicious, sweet, buttery dessert I've ever had! I have recreated them several times at home and I like using this traditional recipe. Here's a trick I found through trial and error- you MUST modify the butter for the shortbread, 1 stick is plenty, DO NOT use 1 1/2 sticks of butter the shortbread becomes more like toffee. AND use butter not margarine. I've screwed these up a few times because of this whole butter debacle! If you fix the butter, I promise you these will be the most delectable things you've eaten!
